Sheet pan meals are always so easy and convenient, especially when your schedule is busy and need all the extra time you can get. This Sheet Pan Salmon Fajitas recipe is no different and also makes for a great meal prep ahead of time. It’s simple, easy, and delicious! I love to make it for the week and eat is as a bowl with brown rice, beans, a little sour cream, and salsa. It is also great for tacos or as a simple salad over some lettuce and extra veggies. The simple spice mix is made with only 5 spices and the actual fajitas are made with only 5 ingredients, including the spice mix. Talk about easy and flavorful!

This Chicken Chile Verde, or Salsa Verde Chicken, (you call it what you want), is so easy to make and so flavorful. I 100% recommend you make this with homemade Salsa Verde. Trust me when I say it is a game changer! Try it with my Salsa Verde, recipe can be found here, and make sure you make a double batch because you’ll want it on everything! The nice thing about this recipe is that you can make this in the Instant Pot or slow cooker and have lunch or dinner for days. Working full-time I always need recipes that will make batches for the week so I can just grab it and go for lunch or having something prepped and ready for dinner. This Chicken Chile Verde is perfect for meal prep or batch prep for the week and reheats well.

Carne Asada is really popular in Mexico when you want to gather with family and friends and make a huge and delicious meal. Carne Asada translates to grilled meat and when someone says, “vamos a hacer una carne asada”, or “let’s make a carne asada”, it means let’s have a cookout or a bbq. Traditionally this involves some kind of marinated steak, the Carne Asada, amongst various other meats, sausage, peppers, onions, and more. You will always find this carne asada, tortillas, homemade salsa, and all the sides you want to make a phenomenal authentic Mexican meal.

The lemongrass absolutely makes this dish and takes it to the next level. The idea came from a delicious curry sauce I had at one of my favorite restaurants. This delicious Mexican stew, Birria de Res (Beef Birria), is cooked in a broth that is full of spices, flavorful, and comforting. It is topped with fresh chopped onion and cilantro, a spicy salsa of choice, and served with homemade corn tortillas. Within the broth is a sauce made from dried chiles, herbs, and aromatics. It is all a labor of love and not meant to be a quick weeknight meal but that is exactly what makes this so special. The time and love put into this dish makes it absolutely worth it. Oh and, of course, the insane flavors and tasty stew that comes out of it all is more than worth it.

Caldo de Res (Mexican Beef Soup)

This caldo de res, (Mexican beef soup), is seriously one of the most comforting soups ever. It probably has to do a lot with the fact that it was a staple in our house growing up and was always something I looked forward to. To this day my abuelita Socorro makes THE BEST caldo de res and it always is so dang good for the soul. It is full of veggies and flavored by a delicious beef broth made from cooking the beef in water before adding all the veggies. It’s hearty but healthy and, let me me be real, perfect with a side of Mexican rice.

Chile Colorado translates to reddened chile and that is exactly what you think of when you hear this dish. A beautiful red chile sauce is made to accompany tender chunks of pork and left to simmer for the deepest, most delicious flavor infusion. The guajillo peppers used in this sauce create that beautiful red color while the ancho peppers help with the depth of flavor. Don’t be intimidated by the use of dried peppers, they truly are easy to work with and you can use them in so many recipes!

Caldo de Pollo (Mexican Chicken Soup)

Talk about comfort food! Caldo de Pollo is the ultimate comforting soup that is so familiar in Mexican households. It is full of all kinds of veggies and all the chicken your belly desires. Traditionally, as I grew up eating it, my mami would use a whole chicken and just cut it into the different parts. This way we all got a little bit of what we liked: my papi liked the chicken breast, my mami the wings, and I the thigh or drumstick. You can absolutely use any kind of chicken you want, mix and match, sub or add veggies. It’s so versatile and easy to make your own. There is one thing you must do though. You must add some salsa to your caldo de pollo and a squeeze or two of lime juice. It’s the cherry on top for this goodness.
