Easy to make homemade chorizo recipe. Simple ingredients make this Mexican sausage flavorful with a combination of spices and ground meat of choice. Perfect with eggs for breakfast or as a taco filling!

Some people always have bacon on hand for breakfast or other dishes but chorizo is something that is always present in my fridge. Chorizo is like the Italian sausage of Mexicans. Just like Italian sausage adds amazing flavor to your pasta sauce instead of just using ground beef, Chorizo makes for the most delicious ground beef substitute!

Growing up, my mom often made chorizo with potatoes, or chorizo con papas, to have with scrambled eggs for breakfast. You can find my chorizo con papas recipe here because after you make this chorizo, you HAVE to make chorizo con papas! There is more than that though. The possibilities with chorizo are endless. Add some chorizo to your chili, make a Mexican-style pasta, use it for chiles rellenos…seriously endless possibilities.

Know what else is so great about this chorizo recipe?! It is Whole30 compliant and only made with real ingredients easily found at any grocery store. It’s so good you won’t even feel like you’re eating “clean” or “healthy”. After my first Whole30 I really started paying attention to the ingredients in all the foods I buy and couldn’t believe the amount of unnecessary ingredients, including the added sugars. Really though…why??

Chorizo

Easy Mexican sausage recipe made with simple ingredients.
Course: Breakfast, Main Course
Cuisine: Mexican

Ingredients

  • 1 lb ground pork you can use ground meat of choice
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tbsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tbsp chili powder
  • 1/2 tbsp ancho chili powder or use all regular chili powder
  • 1 tsp red pepper flakes
  • 1/4 tsp cayennne or chipotle powder optional
  • 1 tbsp oil optional

Instructions

  • Mix all of the ingredients thoroughly in a large bowl. Ensure the spices are well combined with the meat.
  • In a pan over medium heat cook chorizo thoroughly. If you used a very lean meat, use a tablespoon of oil to cook chorizo.

    I’ve been thinking about this since you posted the chorizo nachos recipe! Made your chorizo today and the nachos will be done soon. This chorizo is DELICIOUS! I never knew you could make your own so easily + it’s perfectly whole30 compliant. My boyfriend and I can’t stop taking bites of it while we wait for the potatoes. Thank you!
