The great thing about these chicken flautas is that you can use any shredded chicken you have on hand or just used rotisserie chicken. I love making a big batch of chicken for the week to use it for various things and these flautas are definitely one of our favorites.

These cookies are slightly adapted from my favorite Lemon Ricotta Cookie recipe by Giada De Laurentiis found here. The swap from lemon to blood orange makes for the most gorgeous pink glaze!

This delicious Mexican stew, Birria de Res (Beef Birria), is cooked in a broth that is full of spices, flavorful, and comforting. It is topped with fresh chopped onion and cilantro, a spicy salsa of choice, and served with homemade corn tortillas. Within the broth is a sauce made from dried chiles, herbs, and aromatics. It is all a labor of love and not meant to be a quick weeknight meal but that is exactly what makes this so special. The time and love put into this dish makes it absolutely worth it. Oh and, of course, the insane flavors and tasty stew that comes out of it all is more than worth it.

This caldo de res, (Mexican beef soup), is seriously one of the most comforting soups ever. It probably has to do a lot with the fact that it was a staple in our house growing up and was always something I looked forward to. To this day my abuelita Socorro makes THE BEST caldo de res and it always is so dang good for the soul. It is full of veggies and flavored by a delicious beef broth made from cooking the beef in water before adding all the veggies. It’s hearty but healthy and, let me me be real, perfect with a side of Mexican rice.

Chile Colorado translates to reddened chile and that is exactly what you think of when you hear this dish. A beautiful red chile sauce is made to accompany tender chunks of pork and left to simmer for the deepest, most delicious flavor infusion. The guajillo peppers used in this sauce create that beautiful red color while the ancho peppers help with the depth of flavor. Don’t be intimidated by the use of dried peppers, they truly are easy to work with and you can use them in so many recipes!

Arroz con leche is one of the most comforting and delicious foods, (or drink), I grew up with. It translates to rice with milk and that is exactly what it is. Think of it as a Mexican rice pudding that is very simple but so satisfying. Growing up, my mom would make this arroz con leche in a way that would make it easy for us to drink and eat the rice. Just like many other dishes in Mexican cuisine, arroz con leche can be very different depending on where your family is from. Also, arroz con leche is not just Mexican but there are various other Latin countries that enjoy their own versions of it as well.

Capirotada (Mexican Bread Pudding)

Capirotada is a traditional Mexican bread pudding typically served during lent. However, my mami made it around the holidays and a lot of times it was our Christmas dessert. It was always perfect with a nice little cafecito, (coffee), or a glass of milk. This Capirotada will forever and always remind me of my mami. It’s amazing how the smells of the cinnamon infusing in the syrup and the first bite of this dessert can bring back so many memories. I live for the recipes and dishes that take me back to my childhood and make me think back to so many great times spent with my family.
